  • 300 ml milk
  • 200 ml whipping cream
  • 1 cinnamon stick
  • organic lemon zest
  • organic lime zest
  • a small sprig of rosemary
  • ½ vanilla pod
  • 5 egg yolks
  • 130 g sugar
  • 1 cinnamon stick
  • 15 g flour
  • 250 g blackberries
  • 2 tablespoons of blackberry jam
  • 3 tablespoons of red wine
  1. Pour the milk, and cream in a pot and bring to boil together with the lime and lemon peel, cinnamon stick, vanilla bean and the rosemary sprig.
  2. Turn off and leave to infuse for 15 minutes.
  3. Beat egg yolks with 75 g of sugar and the flour. Combine with the milk.
  4. Preheat the oven to 150 ° C.
  5. Caramelise the remaining sugar in a saucepan and pour it into the molds.
  6. Pour the milk and cream mixture into the molds.
  7. Cook the cream in bain-marie ( Half fill the tray with hot water, arrange molds on the tray )
  8. Cook the cream in the oven for 45 minutes,then remove the pan and let it cool.
  9. Wash the blackberries, mix them with the jam and the wine.
  10. Take out the creme caramel with the help of a knife and serve with blackberries
