- 300 ml milk
- 200 ml whipping cream
- 1 cinnamon stick
- organic lemon zest
- organic lime zest
- a small sprig of rosemary
- ½ vanilla pod
- 5 egg yolks
- 130 g sugar
- 1 cinnamon stick
- 15 g flour
- 250 g blackberries
- 2 tablespoons of blackberry jam
- 3 tablespoons of red wine
- Pour the milk, and cream in a pot and bring to boil together with the lime and lemon peel, cinnamon stick, vanilla bean and the rosemary sprig.
- Turn off and leave to infuse for 15 minutes.
- Beat egg yolks with 75 g of sugar and the flour. Combine with the milk.
- Preheat the oven to 150 ° C.
- Caramelise the remaining sugar in a saucepan and pour it into the molds.
- Pour the milk and cream mixture into the molds.
- Cook the cream in bain-marie ( Half fill the tray with hot water, arrange molds on the tray )
- Cook the cream in the oven for 45 minutes,then remove the pan and let it cool.
- Wash the blackberries, mix them with the jam and the wine.
- Take out the creme caramel with the help of a knife and serve with blackberries
