Hasselback Potatoes

  • 4 -5 medium potatoes
  • 30 g butter
  • fresh thyme
  • 3 tbsp grated parmigiano cheese
  • fleur de sel
  • pepper
  1. Preheat the oven at 200 °C.
  2. Clean and wash potatoes.
  3. Place a potato in the groove of a wooden spoon. Using a sharp knife, cut down until the knife rests on the outer edges of the spoon. It should cut almost all the way through the potato, leaving the bottom intact to hold the slices together.
  4. Melt the butter. Mix thyme leaves with grated cheese,
  5. Place the potatoes in a baking tray and drizzle over the butter.
  6. Season with grated cheese and more butter.
  7. Bake for 60-70 minutes.
