Pasta & chickpeas with prawns

  • 500 g boiled chickpeas
  • 80 g leek
  • 200 g scucuzun (ligurian pastina) or other small pasta
  • 400 g prawns, cleaned
  • vegetable stock
  • fresh rosemary twig
  • a bay leaf
  • Olive oil, extravirgin
  1. Finely slice leek and saute for 3 minutes in a pan with 2 tbsp olive oil.
  2. Add bay leaf, chickpeas, saute another minute. Add the vegetable stock.and cook for 5 minutes.
  3. Salt and add pastina ( or other small pasta) Calcolate 20 minutes cooking time in toto ( pasta cooking time plus minutes needed to arrive to 20 minutes)
  4. Clean prawns and add to the soup, cook for another 2 minutes.
  5. In the meantime in a little pan heat 5-6 tbsp olive oil with the rosemary twig.
  6. Filter and season the soup with rosemary scented oil and freshly grounded pepper.
