Magic pumpkin cake

Ingredients
  • 250 g flour 00
  • 250 g roasted pumpkin
  • 120 g sugar
  • 2 eggs
  • 50 g melted butter
  • 1 teaspoon of cinnamon
  • 1 teaspoon of fresh ginger, grated
  • a pinch of grated nutmeg
  • 16 g of baking powder
  • vanilla
  • a pinch of salt
  • For the decoration:
  • walnuts
  • powdered sugar
Instructions
  1. Preheat the oven at 180°C
  2. Mix the flour with the baking powder, cinnamon, nutmeg and a pinch of salt.
  3. Combine the roasted pumpkin purea with eggs, sugar, vanilla, melted butter and grated ginger,
  4. Combine wet and dry ingredients and mix until creamy and smoothy.
  5. Pour the mixture in a previously buttered baking pan.
  6. Bake for 35-40 minutes.
  7. Remove from the oven and sprinkle with coarsely chopped walnuts and powdered sugar.
