Penne with zucchini pesto, feta and lime

  • 350 g penne
  • 500 g zucchini
  • 120 g feta cheese
  • 80 g pitted green olives
  • 80 g pumpkin seeds
  • 2 lime (organic)
  • a bunch of chives
  • 1 spring onion, only the green part
  • olive oil, extravirgin
  • salt
  1. Simply grate zucchini, season with lime juice , salt , pepper and let marinate for 15 minutes.
  2. Drain and put zucchini in the food processor with pumpkin seeds, green olives, onions and olive oil.Blend until creamy.
  3. Cook the pasta in salted boiling water.
  4. Drain it and season with the zucchini pesto and serve with crumbled feta cheese, small slice of lime. pumpkin seeds and chopped chives.
  5. You can serve it hot or room temperature.
