Sirloin with tuna sauce ( Vitello tonnato)

- 600 g calf sirloin
- 100 g mixed salad
- 100 g canned tuna
- 100 g mayonnaise
- 2 anchovies in oil
- a bunch of salted caper
- a tbsp butter
- white wine , dry
- fresh herbs: bay leaf, rosemary , thyme
- olive oil, extravirgin
- Cut the meat into 3-4 cm cubes.
- Cook it for 4 minutes in salted boiling water scented with bay leaf, rosemary and thyme
- Drain and dry with kitchen paper.
- Put the tuna, 2 anchovies , a bunch of capers and 2 tbsp of white wine in the blender.
- Blend until creamy , add the mayonnaise and mix well.
- In a large pan melt and heat the butter and quickly fry the meat for 20 seconds, until golden brown.
- Serve the meat with mixed salad and tuna sauce.
