Sirloin with tuna sauce ( Vitello tonnato)

Ingredients
  • 600 g calf sirloin
  • 100 g mixed salad
  • 100 g canned tuna
  • 100 g mayonnaise
  • 2 anchovies in oil
  • a bunch of salted caper
  • a tbsp butter
  • white wine , dry
  • fresh herbs: bay leaf, rosemary , thyme
  • olive oil, extravirgin
Instructions
  1. Cut the meat into 3-4 cm cubes.
  2. Cook it for 4 minutes in salted boiling water scented with bay leaf, rosemary and thyme
  3. Drain and dry with kitchen paper.
  4. Put the tuna, 2 anchovies , a bunch of capers and 2 tbsp of white wine in the blender.
  5. Blend until creamy , add the mayonnaise and mix well.
  6. In a large pan melt and heat the butter and quickly fry the meat for 20 seconds, until golden brown.
  7. Serve the meat with mixed salad and tuna sauce.
