Spaghetti with favabean pesto and salami

  • 380 gi spaghetti
  • 1, 5 kg fresh favabeans
  • 25 g pinenuts
  • 30 g grated grana padano cheese
  • 80 g salami
  • 10 fresh mint leaves
  • 1 clove of garlic
  • olive oil, extravirgin
  • salt
  • pepper
  1. Clean and boil favabeans for 5 minutes,drain and peel each single beans.
  2. Set aside a handful of favabeans. Put the rest into the blender with fresh mint leaves a clove of garlic, grated cheese, pinenuts. Salt and pepper.
  3. Blend until creamy.
  4. Add 6 tablespoon of oliva oil, mix well.
  5. Cook the pasta, ( preserve some spoon of cooking water).
  6. Finely slice the salami then cut into strips
  7. Drain the pasta, season with favabean pesto ( add a spoon of cooking water if necessary)
  8. Add salami strips, fresh mint leaves and season with olive oil.
  9. Serve it immediately.
